With the arrival of Spring, the Disciples Escoffier around the world have been very active, events have happened around the world to celebrate the arrival of sunny days (or the end of summer for the southern hemisphere!)

Delegation Nord Hauts de France

Great mobilization Saturday, March 11 at the New Century for Rare Diseases (PLE MARA), several culinary associations were present.

Léa Leclercq (les délices de Léa) suffering from the PACS1 Syndrome accompanied by Guillaume Ferand suffering from trisomy 21 were able to carry out a culinary workshop with the chefs in the North and Les Disciples d'Escoffier Hauts de France. The president of the delegation, Philippe Lor thanked all the participants for their good humor and their smiles.

The Disciples Escoffier des Hauts de France also joined the Normandy Grand Ouest delegation for their 39th chapter on March 13 at the Lycée hôtelier Georges Baptiste de Canteleu.

Delegation Normandie Grand Ouest 

On March 13, 2023, the 39th Chapter of the Disciples Escoffier Normandie Grand Ouest took place at the Lycée Hôtelier Georges Baptiste in Canteleu Rouen. Under the presidency of Christian Girault.

A charity dinner that ended with the presentation of a check to GEFLUC Profit. A total of 13,000 Euros, thanks to the generosity of all the partners, guests and actors of this beautiful event.

Delegation Provence Languedoc

Thirty years of the Provence Languedoc delegation!

On March 20, the gala dinner of the Disciples Escoffier delegation Provence Languedoc took place. That evening, they celebrated the association's 30th anniversary by inducting 14 new disciples and above all a vibrant tribute was paid to Michel Receveur, who created the delegation 30 years ago!.

An excellent meal was served by the students of the hotel school in Avignon. Chaired by Bruno Gourdet.

Delegation Grand Lyon Ain Loire 

On March 20, the tenth chapter of the Disciples Escoffier Grand Lyon Ain Loire took place at The Ruck Hotel.

9 new inductees have joined this beautiful family, we welcome them.

Prior to this chapter, the annual General Assembly of the delegation chaired by Christophe Geoffroy took place.

Delegation Occitanie Pays Catalan OK

There has been unrest in the ranks of the Disciples of Auguste Escoffier of the delegation Occitanie Pays Catalan, since the mysterious disappearance of their president Guilhem Michalet Lombardini. As some members began to lose hope, unexpected news came to put the organization's affairs in order.

Fabien de Bruyn, one of the association's most active and respected members, was re-elected as president at a recent general assembly.

His campaign was centered on carrying on the vision of their late president, while bringing a personal touch to the running of the organization. His efforts paid off, as he won a landslide victory in the membership vote. Les Disciples d'Auguste Escoffier now has a new president, a committed and passionate leader who is already committed to continuing the culinary legacy left by their founder. Fabien de Bruyn's first action as president was to reaffirm the importance of culinary training and education within the organization. He also promised to strengthen ties with culinary associations around the world, in order to promote French culinary art and to advance global gastronomy as a whole. Ultimately, the re-election of Fabien de Bruyn brought a breath of fresh air to the Disciples of Auguste Escoffier, who now have a new president who is enthusiastic and determined to further their cause. With his leadership and experience, the future of the organization looks brighter than ever.

On March 20, 2023, the Disciples of Auguste Escoffier d'Albi inducted Me Rechou Marie, Julien Hermida and Silvestre Alexandre in a fraternal and friendly atmosphere. The new members took an oath to respect the values and principles of French gastronomy, followed by a delicious meal shared among the members. This evening marks a new chapter in the history of the brotherhood.

Delegation Provence Méditerranée

On Monday March 27, 2023, the 11th Chapter of the Provence Méditerranée delegation took place at the CFA Corot Formations in Marseille.

A very nice convivial and gastronomic evening which allowed 9 Disciples to join this joyful delegation chaired by Alain Laporte.

The kitchen and dining room team was, once again, exceptional and produced a magnificent performance for the 130 guests.

Young Talents Escoffier regions selections

On Thursday, March 9, the Cifa d'Auxerre catering division hosted the Paris/North/East regional selection of Young Talents Escoffier.

In the kitchen, the theme "Trout, from water to land, zero waste" was to inspire the teams' recipes, for traditional service and "take away" service. A very current additional constraint: avoiding and fighting against food waste by controlling waste, water and energy consumption.

In service, taking inspiration from their regional heritage, the competitors had to set up a prestigious table, invent, prepare and argue a cocktail, identify five non-alcoholic drinks, and perform a full service from reception to the end.

Alexandre Zoccolan, chef from Ammerschwhir working for Julien Binz, and Axel Wannier, head chef at the starred restaurant La Maison des Têtes, produced an XXL performance that qualified them for the national grand final.

Dinners and events to promote the association multiplied in China in March. All leaded by President Peter Zhou.

On March 5, in Hangzhou, a dinner preceded by a conference “Chef Social Club”, reserved for members, took place at the Pu Nature’s Own restaurant hosted by speaker Yongjun Weng and menu by chef Alan Yu.

On March 11, 2 Epicure dinners. One in Beijing at Maison Flo by Chef Victor Yu and the other in Hangzhou by Gud Hot Pot & Chaogiu by Chefs Max Sun and Max Feng.

On March 25, an Epicure dinner in Shanghai at the La Duration establishment, orchestrated by Chef Miles Qiu.

Next meeting in April, on April 03 in Shanghai, the meeting of the members, with a "Social Club Chef" at the restaurant at Jojo then on April 15 an Epicure dinner in Beijing at the Hometown Palace restaurant by the Chef Jack Aw Yong.

Delegation Tahiti Polynésie Française 

The Disciples Escoffier Tahiti French Polynesia met on March 28 in General Assembly for the renewal of the positions of President, Vice-President and Treasurer of their board.

They had the pleasure of electing and welcoming Mr Pierre Lecorne as the new president, Miss Morgane Richard as Vice-President, and Jim Cholet as Treasurer.

It is an honor for them to be able to take up the torch of the founding team of the association in Polynesia.

Our thoughts go out to President Christian Frechede who left us prematurely and his wife Isabelle who continues to support them.

We are pleased to announce the upcoming arrival of nearly ten new members whose induction will take place during the months of May and June.

See you soon for new gastronomic adventures that will link the development of the culinary arts in Polynesia and the promotion of young talents in our professions.

Délégation Vietnam

𝐋𝐞 𝐉𝐚r𝐝𝐢𝐧 𝐒𝐞𝐜𝐫𝐞𝐭 - Disciples 𝐄𝐬𝐜𝐨𝐟𝐟𝐢𝐞𝐫 Vietnam, an exclusive C𝒐𝒍𝒍𝒂𝒃𝒐𝒓𝒂𝒕𝒊𝒐𝒏 at 𝑳𝒂𝒗𝒆𝒍𝒍𝒆 𝑳𝒊𝒃𝒓𝒂𝒓𝒚

March 29, 2023 from 6:30 p.m., the lucky guests were expected for a discovery dinner, an exciting "culinary journey", at the Lavelle Library.

Six talented Chefs, Disciples Escoffier collaborated that evening to create a creative and contemporary 6-course menu.

Chef SAKAL PHOEUNG (Le Corto, P'ti Saigon and President Disciples Escoffier Vietnam), Chef JULIEN PERRAUDIN (Quince), Chef SHOZO (Smoke), Chef BENOIT LELOUP (Clay, Le Brix, TINTŌ), Chef ADRIEN GUENZI (Lüne), Chief THAO NA (Lavelle Library).

Attendees had this unique chance to embark on an exciting journey of amazing flavors and revel in the festive atmosphere with a high-quality menu in the “culinary garden” of Lavelle Library in Ho Chi Minh City.

President Sakal Phoeung has announced us the sad news of the death of a committed Disciple from his delegation. Thierry Cambassedes, “a true gentleman, with a soft voice always ready to help. […] you will always be in the minds and hearts of the people you touched and knew”. Condolences to his wife and loved ones.

On a happier note, Restaurant Anan Saigon was awarded #40 and crowned The Best Restaurant in Vietnam 2023. Congratulations to Chef Peter Cuong Franklin, He is a Disciple Escoffier of the delegation, we are proud of his hard work for the promotion of the Escoffier spirit!


Delegation Swizerland

On Sunday March 26, the annual general meeting and 59th spring chapter of the Swiss delegation took place in Bern. In the presence of the International Vice President for the France Zone, Jean Michel Mougard and his wife as well as the Executive Board, Christian Heuline and Mario d'Orio.

Important moment this day with the vote of the new president Thierry Fischer, and his new office (only the post of the general secretariat was vacant with the departure of Bernadette Bitter-Favre, it is therefore the young and dynamic Janine Wicki who is elected at this job).

Pierre Alain Favre hands over after 32 years of involvement in the board and 10 years of presidency of this beautiful delegation! BRAVO and THANK YOU Pierre Alain!!!

Good luck to the new team and let's find Pierre Alain very soon in his work as international vice president for the Europe zone!!!

Delegation United Kingdom

The 17th chapter of the United Kingdom delegation took place on Monday March 20th, 2023 during the 115th Anniversary of the Waldorf.

The office chaired by President Daniel Ayton and attended by International Vice President in charge of Europe – Pierre Alain Favre, Disciple Escoffier Uk Anton Mosimann and International Honorary President Michel Escoffier after opening the chapter Daniel inducted 28 new disciples to whom we welcome. 

Following these enthronements, the delegation created in 2007 has 69 disciples since reforming in 2017.

The auction that followed called by Disciple Colonel Harry Lomas, RLC; MBE; BEM is convinced that “laughter is a need, laughter nourishes people”;. Thanks to the donations collected, the Disciples Escoffier will Pass a Cheque of £ 4000 in donation to the Restaurant at Westminster Kingsway College named after, Auguste Escoffier, who was one of the founders in 1910 the restaurant still follows the principles of Escoffier, combined with modern techniques and presentation. 

The gala dinner that followed was created by Chef Luke Rayment-Blakey – Hilton Waldorf who was made a Disciple after the Santé was a great success and brought together 150 guests for a menu worthy of Escoffier.

Hector MacKenzie October 2022

A founding member of Disciples Escoffier UK, along with Michel Bourdin and William Hamlin; being presented in Nice in 2007. During his long career was employed as a lecturer at Cumbernauld College for nearly 27 years he held the post as curriculum manager. Although retired he still enjoy mentoring young talent. In 2022 he received the Cordon Culinaire.

A founding member of Disciples Escoffier UK, along with Hector MacKenzie and William Hamlin; presented in Nice in 2007. With a 26-year (1975- 2001) tenure as chef des cuisines at London's Connaught hotel. He was awarded the insignia of Knight of the Legion of Honour. He remained the curator of the Auguste Escoffier Museum of Culinary Art, Michel Bourdin did so much for the UK hospitality bringing chefs together; as he leaves his mark and legacy in the UK culinary scene. Founder of the Entente Cordial, a competition between college students in the UK and France.

Delegation Canada 

Chapter and Epicure's Dinner

This Tuesday, March 28 was held at Portus360 in Montreal, restaurant of the President of the Delegation, Helena Loureiro, the second chapter of the Canada delegation.

A tribute meal to Mr Paul Bocuse was organized with a menu composed by chefs who worked with Mr Paul Bocuse in Collonges, orchestrated by Jérémie Muller.

The delegation now has 26 new members.

Our Epicurean Dinner not only is an evening to enjoy our dedication to exquisite food and impeccable service, but an induction ceremony for new Disciples Escoffier candidates of the area will follow, so that we may share our love for cuisine, and our industry, with those around us, and recognize those who follow in The Master's footsteps.

"Rêve de Nuit Printemps" Diner 

On March 29, a French dinner took place at the Nagoya Tokyu Hotel.

This sumptuous dinner named Rêve de Nuit Printemps with a most tempting menu was orchestrated by President Chef Nobuhiko Fukuda and the chef of the Nagoya Tokyu Hotel, himself a Disciple Escoffier, Chef Maeshima.


The Disciples Escoffier in solidarity on Reunion Island with Relais pour la Vie on April 1, 2023

After a three-year hiatus due to the COVID crisis, Le Relais Pour La Vie is back. This event in favor of medical research and which aims to promote the prevention, treatment and cure of cancer, once again had the support of the Escoffier of the Reunion Island.

Led by President Yves Bouvier and always available for mutual aid and charitable solidarity actions, they had come in large numbers, in sportswear, but of course without forgetting their scarf!


The dates of our next International Meetings have finally been validated!

You can already block in your diaries the weekend of October 19 to 22, 2023!

We will have the pleasure of meeting in Sicily (Italy), in the charming town of Siacca!

You will be welcomed there by Giovanni Montemaggiore, the delegate of the region Sicily country Italy and his entire team!

La Liste Méditerranée 2023 evening at the Hermitage Hotel in Monaco on Thursday 22 March.

A superb gala dinner directed by Emmanuel Pilon, Alain Ducasse, Massimo Bottura, Clare Smith and Jessica Prealpato.

The Disciples Escoffier, represented by Christian Heuline, were honored for their actions to promote Gastronomy.

On March 21, Nice visit in the footsteps of Auguste Escoffier that day, in Villeneuve Loubet, on the sidelines of the Euro-Toques France Officiel and Maîtres Cuisiniers De France congresses.
