While many of you are busy preparing for the end of the year celebrations, many delegations around the world have organized their Autumn Chapter this month.

Transmission, Sharing and Friendship is definitely the DNA of our Association! But with chapters and gala dinners, it's generosity that takes over!!

ZONE FRANCE

Bourgogne Franche Comté Delegation

The 12th chapter of the Bourgogne Franche Comté delegation took place on Saturday December 4, 2022 during the chocolate fair in Macon.

The office chaired by Mario Vino was thus able to induct 7 new disciples to whom we welcome.

Stephanie Maillard, Imad Sfeir, Mederic Lachaux, Clement Marie, Clement Millet, Jean Dumontet and Salome Montbobier.

Following these enthronements, the delegation created in 2011 has 145 disciples.

During this show which lasted 2 days, under the leadership of their president, the Disciples made crêpes Suzette Auguste Escoffier style for the many visitors to this 1st chocolate & delicacies show.

Greater Lyon Ain Loire Delegation

The chapter of the Grand Lyon Ain Loire delegation took place on November 28 at the Greta Cfa Rabelais in Dardilly, under the chairmanship of Christophe Geoffroy.

The opportunity also for the Board of the delegation to give a check to their 2 champions, Anaïs Esteve winner of the Young Talents Escoffier Cuisine 2022 Competition and Ivan Uzel, who came in 2nd place in the same competition for the Service category.

Provence Mediterranean Delegation

Monday November 28, 2022, the 10th Chapter of the Provence Mediterranean Delegation took place at Fort Ganteaume, Marseille.

The gala dinner that followed was organized for the benefit of the wounded soldiers in operation and the families of the French Army combat dead and was held under the high patronage of the Governor of Marseille, General Facon.

President Alain Laporte had the honor of being elevated to the rank of Lieutenant-Colonel of the Citizen Reserve at the hands of General Facon.

Var Alpes du Sud Delegation

The autumn gala dinner of the Var Alpes du Sud delegation took place on November 28 at the JOA Casino in La Seyne sur Mer. A great success which brought together 200 guests for a menu worthy of Escoffier.

The chefs newly inducted in 2021 all prepared the meal under the guidance of chef Nina Mel, helped by Mathieu Gossuin and Jean Troin.

As usual, a great raffle was organized and all profits from the meal were also donated. Which allowed, this year again to raise more than 10,000€ for sick children! Congratulations to President Raymond Macario for his unfailing involvement with the sick childs.

Also note in this delegation, that on November 21, a meeting of the 04/05 section of the Disciples Escoffier Var Alpes du Sud took place at the CFA René Villeneuve in the presence of President Raymond Macario.

Jean-Pierre Bourdaud, head of the Southern Alps and Alpes de Haute Provence departments, who has been working in this sector for many years, will leave his place to Christophe Roldan.

Centre Val de Loire Delegation

On December 1st, a very nice evening took place at the Lycée Hôtelier et Tourisme Val de Loire in Blois. The young service and kitchen students were wonderful and provided a very high quality service.

This 5th chapter of the Disciples Escoffier - Center Val de Loire Delegation saw the enthronement of no less than 12 disciples. A chapter that allows to add new talents to this young delegation for even more events more transmission more solidarity!

As such, the benefits of this evening made it possible to donate a check for €1,200 to the Student Office of INSA de Blois. This donation will allow some of these young people in great financial difficulty to be able to join their families for the Christmas holidays.

Congratulations to President Rémy Giraud for this great organization!

Nord Hauts de France Delegation

Various participations of the Disciples of Escoffier from Hauts de France under the presidency of Philippe Lor.

Escoffier evening on Friday, December 2 at the Lycée du Touquet:

An induction, a donation to the pink blouses, congratulations to the winners of the national selection Young Talents Escoffier, high school’s students.

Following last year's charity evening at the Domaine des Charmes in Lesquin: Invitation by Professor Meignan, Head of the Oscar Lambret center laboratory, accompanied by the Hauts de France Lions Clubs, the Hauts de France rotary and The Children Cancer and Health Association for the delivery of checks: €36,000 to Doctor Hélène Sadour Bonnage, Pediatrician Onco-paediatrics, €40,853 to Professor Meignan, of which Les Disciples Escoffier Hauts de France participated with a check of €12,000 € and €50,000 for the SCNRS/ INSERAM AU chu DE Lille, for the purchase of a Peyence microscope worth €150,000 which analyzes cancer cells.

Monday, November 21; Annual General Assembly, autumn chapter with the enthronement of 13 Disciples followed by a gala dinner.

Grand Sud Ouest Delegation

The Cuisine art at the service of hospital clowns.
During the three days dedicated to the Gastronomades of Angoulême, the Disciples d'Escoffier from the delegation but also from all over France never stopped using all their talent and benevolence to raise funds for the benefit of Etoil'Clown, the association of hospital clowns which operates in five pediatric departments and two nursing homes in Poitou-Charentes.
The Disciples d'Escoffier showed their generosity by making appetizers sold on their stand.

In their wake, Ludovic Poulard, florist of "A fleur de pot" joined the disciples to provide magnificent floral compositions, also sold for the benefit of Etoil'Clown.
Etoil'clown is convinced that "laughter is a need, laughter nourishes people". Thanks to the donations collected, the Disciples d'Escoffier will allow hospitalized children to receive smiles and good humor from hospital clowns, caregivers.
Thank you for their support in Etoil'Clown's missions.

Reunion & Indian Ocean Delegation

The General Assembly of Disciples Escoffier Delegation Reunion & Indian Ocean took place on December 3rd.

A slideshow on screen presenting the many actions of this year 2022, a balance sheet, accounts, projects for 2023 but also the re-election of President Yves BOUVIER and his new Board.

It was a day again and again of sharing and exchange in a positive and respectful spirit between colleagues and friends around a magnificent Escoffier cocktail, traditionally prepared by the new members of the year 2022.

Canada Delegation

The Disciples Escoffier of the delegation were present and involved in the cocktail party for the 40th anniversary of Le Pivot on November 30th.

Le Pivot's 40th anniversary cocktail party was a great success, welcoming more than 200 guests, employees and volunteers under the tasting formula food pairings and microbrewery beers "From appetizer to dessert" at Espace Saint-Grégoir, the one of the most beautiful reception halls in Quebec.

At the popular cost of $40 to highlight the 40 years of social and community involvement of Le Pivot in Beauport and the greater Quebec City region, the event allowed participants to taste a 6-course menu and discover 9 beers thanks to the company of Beauport Tasting and animation of the Rive and its director Alain Harbour, author of the book "Food and beer pairings from starter to dessert", Disciple Escoffier as the first beer sommelier in North America, who acted as entertainer throughout the evening.

Vincent Croteau, renowned chef who was elected best chef in Canada in 2015-2016, Disciple Escoffier and owner of the Chef Vincent business in Beauport.

Ludovic Vault, pastry chef, owner of "Praline et Chocolat" at Château Richer, named pastry chef of the year in the greater Quebec City region in 2015.

Laurianne Rousseau, chef and owner of Nature Gourmande, Disciple Escoffier.

Danny Chabot, owner of Dépanneur de la Rive.

The jazzy musical atmosphere was provided in a beautiful way by the trio of Jean-Guy Lachance.

The Disciples Escoffier participated voluntarily in the preparation of the cocktail, thus meeting the criteria of contributing to one charitable activity per year.

Délégation USA - West

On Wednesday, November 9, it was at Club Pasadera in Monterey, California that Michel Escoffier went to celebrate the annual chapter of the West USA sub-delegation led by Mary Chamberlin.

A hundred guests were able to feast on French sweets and the chapter where 6 new Disciples Escoffier were inducted.

ZONE ASIA PACIFIC

Thailand Delegation

A Charity Dinner was organized by Disciples Escoffier Thailand on 7th December 2022 in the garden of the French Ambassador's Residence, on the banks of the Chaophraya River. Aside of enjoying delicacies prepared by some of Disciples Escoffier chefs like Henk Savelberg, Thierry Drapeau, Herve Frerard, Kent Vatcharavee, Clement Hernandez, Alexandre Demard and Frederic Hamann, the more then 110 guests attended to the traditionnal induction chapter.

French Ambassador Thierry Matou has been inducted Honoris Causa member, Bangkok's Governor Chadchart Sittipunt has been inducted as a member of Disciples Escoffier Thailand. He re-iterated his desire to support the push for good French cuisine in the city. 6 chefs and 2 sommeliers/Maître d’Hotel received also their scarf.

The dinner profits will help to support the Hospitality & Catering Training Center of Mae Sot (Hospitality And Catering Training Center HCTC - Management Office), a school that the local association is accompanying by providing Chef training support, internship, scholarship & equipment support.

Tahiti French Polynesia delegation

As Christmas approaches, the Disciples Escoffier of the Tahiti French Polynesia delegation, led by their President Christian Fréchède, have been mobilized!!

A sale of gourmet products was organized at the Art'griculture center in Papeete (near Vaima) from 9:00 a.m. to 4:00 p.m. on Friday, December 9th. The benefits of the day will be donated to the association for the protection of women against violence, Vahine Orama Tahiti Iti.

The sale was a great success and the many buyers found them to show their solidarity and also find ideas for Christmas! Chefs, pastry chefs and other talented Disciples have joined forces to create a pop-up shop and offer good 100% local products.

Délégation Vietnam

Le président Sakal Phoeung et son équipe avaient préparé un ultime voyage de découverte culinaire le 7 décembre dernier au restaurant CLAY à Saigon, alors que 8 talentueux Chefs Disciples d'Escoffier ont collaboré pour créer un menu de 5 plats créatif et contemporain. Chacun d'eux a fait voyager le client autour de diverses saveurs.


NEWS FROM THE INTERNATIONAL PRESIDENT

On December 1, a magnificent evening took place at the French Embassy in Denmark where the friendship between Denmark and France and French gastronomy were in the spotlight to celebrate 100 years of French presence at the Palais Thott.

During the evening, the Ambassador had the honor of presenting H.R.H. Princess Marie with the insignia of Officer in the Order of Arts and Letters, paying tribute to her exceptional commitment to promoting cultural ties between France and Denmark.

The moved Princess then unveiled a plaque marking the centenary.

Guests savored dishes inspired by a menu by Auguste Escoffier, the founder of modern French cuisine, who came to Copenhagen in 1923. The menu was prepared by two starred French chefs, Nicolas Sale, International President of the Disciples d 'Escoffier International and Davy Tissot, winner of the Bocuse d'Or in 2021 with the head of the embassy, Etienne Lemaître.

The evening was set to music by the Danish Boys Choir and violinist Niklas Walentin.

Nicolas Sale, International President had the honor of inducting Christophe Parisot, Ambassador of France to Denmark. Welcome to him and our gratitude for highlighting Auguste Escoffier and the Disciples during this gala dinner.
