A new innovative project led by the Disciples Escoffier France
In a context that is more than delicate and uncertain for all Gastronomy professionals, the Disciples keep in mind that our young future professionals shouldn’t be forgotten.
In the same dynamic of support, accompaniment and transmission as the Escoffier Young Talent Contest, the Disciples Escoffier Pays France are happy to offer young people the “une passion un talent” challenge : #unepassionuntalent.
#unepassionuntalent is a series of video challenges launched for young people under 25 years old, sponsored by renowned professionals around three main themes: pastry, table service and cuisine.
With an educational and fun approach, the participants are to film themselves respecting the set instructions and rules.
Each young competitor will have the chance to have a webinar to exchange with his godparent for his challenge.
Since 2 seasons now, nearly 100 young people have already registered to participate in this adventure!
For the before last chapter of season 2, the sponsors are: in pastry Loic Béziat World Champion Arts Sucrés, in cuisine Fabrice Brunet MOF and Chef of the Ateliers Lenôtre and in service Nicolas Brossard, Director of Room & Partner House Christopher Coutanceau. A final chapter will close this season 2 from 3 May 2021.

The 1st Chapter of 2021 took place on March 31st for our Disciples in Australia
On Wednesday March 31st in Australia, an Opening Chapter was held in Canberra, at the residence of His Excellency Ambassador of France Mr Jean-Pierre Thébault.
During a memorable dinner prepared under the leadership of the President of the delegation, Christophe Grégoire several Disciples were inducted : His Excellency Ambassador of France Mr Jean-Pierre Thébault, chef Gabriel Gaté, chef Hervé Aubry, chef Dean Parkes, chef Daniel Hiltbrunner, chef Anthony Craig, Franck Leonhardt, Katrina Hiltbrunner.
The menu was designed to honour the memory of Auguste Escoffier and combining native Australian ingredients. As for the wines, they were beautifully matched with each dish.
This dinner was made possible by the generous support of their sponsors whom they wish to thank warmly.
Thanks to the donations, the delegation will be able to support the training of its candidate in the Young Talents Escoffier Worldwide contest!
Our Disciples in China are more engaged and dynamic than ever!
Alain Peyrefitte said «When China wakes up...», but that was definitely before he knew about Peter Zhou and Jérôme Laurent! The Chinese delegation is remaining very active even during this Covid period.
On March 27, 2021, in partnership with Park Hyatt and following the great tradition of Auguste Escoffier’s Epicure Diners, 7 Chefs in 7 hotels across 6 cities in China served the same menu the same evening.
This 8-course menu, inspired by the great diners of the early 20th century with recipes such as the Consommé Olga, the Pigeon Roti or Filet Mignon served with Pommes de Terre Anna, was widely appreciated by the 220 guests who participated in the diners.
Zone France - Normandie Grand Ouest Delegation
An innovative and unprecedented operation launched by the Disciples Escoffier Normandie Grand Ouest
In order to continue to demonstrate their expertise in the food industry, the Disciples Escoffier Normandie Grand Ouest Pays France delegation has launched an innovative and unprecedented operation, the "FESTIVAL D'ART ET GASTRONOMIE", the Festival of Art and Gastronomy.
Starting from March 23rd and throughout the whole month of April their project is to have one or more artistic pieces made by the different actors of the region (Training establishments and professionals such as restaurants, charcutiers, caterers, pastry cooks, chocolate makers, ice cream makers...). They will present these exclusive pieces in their establishment, then invite the press and sell them for the benefit of a charity or the company.
A beautiful initiative from the Disciples of the delegation who continue to showcase their talent!
This month, we chose to present to you the formidable and dedicated Eddy Bonjean, instructor and Wine sash Disciple Escoffier of the Provence Méditerranée delegation in France, through an exchange between Auguste Escoffier and one of his Dsiciples.
