DINNERS, CHAPTERS AND MEETINGS
MAYENNE PAYS DE LOIRE
On Sunday, April 8th, the Disciples Escoffier Delegation of Mayenne organised its 4th chapter. This meeting was the occasion to induct 8 new members.
There are eight inducted members on this day. The ceremony was held at Aquarelle Restaurant in Château-Gontier together with a sumptuous meal.
The 9th chapter of the Bourgogne Franche-Comté was held on Monday, March 19th at the Château d’Igé in Saône-et-Loire, where the delegation welcomed 10 new members (7 red scarves and 3 blue scarves): Philippe Ropers, Yvon Xia, Jean Philippe Cousin, Jean Bouvier, Florence Maiga (the 100th Disciple of the Delegation!), Didier Gherardi, Julien Ledermann, Alain Choquet, Matthieu Dupuis and Nicolas Pagnon.
The delegation has now 106 disciples since its creation in 2010.
NORMANDIE GRAND OUEST
On Tuesday April 10th, the Normandie Grand Ouest Disciples Escoffier together with the students of Georges Baptiste de Canteleu Rouen Hotel School, held an Epicurean dinner whose profit aimed at funding a pedagogical project for their class.
The Escoffier chefs and their cooking teachers – Escoffier chefs as well – have coached students who had been much involved and happy to set up the menu which blended techniques and precepts of the « Culinary Guide ». The students in the room led by the teachers have ensured the service together with the kitchen team.
It is at Avignon Hotel School that this 25th chapter was held. The 25th anniversary of the delegation was celebrated at the same time as the 50th anniversary of the hotel school which organised demonstrations for this event all year round. A great success for this gathering of Disciples chefs and friends from the surroundings. The chefs have known how to transfer the know-how to the young apprentices in order to realise this pretty gala dinner with mouth-watering flavours, aromas and colours. “Our harmonious building force is the benchmark of the Escoffier Spirit. The Grand Sud-Ouest Disciples Escoffier met on Tuesday, March 8th, for their traditional Epicurean dinner at Pardhaillan d’Auch Vocational School.
This evening comemorating Yves Pinard – deceased in 2017 and a strong supporter of good food and of Disciples Escoffier, honorary co-president of Grand Sud-Ouest Delegation – was sponsored by chef André Daguin benefitting for the League against Cancer.
But there is also « Les Fourneaux des Escoffier”. It has been two years that the Grand Sud-Ouest of Disciples Escoffier Country France and the hotel school of La Rochelle get together to organise a day dedicate to great gastronomy according to the values they have in common: transmission, innovation, tradition are the three common pillars of the two organisaitons in their missions whose keystone is youth. On Thursday March 29th 2018, the students of the hotel school had the chance to apply the techniques behind the exceptional menu made by three disciples of the delegation.
REUNION INDIAN OCEAN COUNTRY
Yves Bouvier, the president of Reunion Indian Ocean Delegation and its beautiful team have organised the Esoffier dinner around the theme of the PACA (Provence-Alpes-Côte d’Azur aka French Riviera) region at La Renaissance hotel school in Plateau Caillou.
These young students offered a beautiful service with dynamism and quality… the squad was harmonious, communicative and classy. “Therefore, thanks to this nice squad and to all those who work to train and support these young ones. Thanks to Disciples Escoffier for this royal feast.”
On Thursday April 26th was held a work meeting with the Italian macro-region teams with Bernard-Louis Jaunet. Thanks to the warm welcome of Phillipe Zeller, the French ambassador near the Holy See and the flawless friendship of the steward of the house, Jean-Marie Le Rest, Past founding president of Australia Country and now delegate responsible of the Rome region (Lazio), the different persons in charge met up for a very constructive day of work at the Bonaparte villa.
Representatives accompanied the teams to present very passionate projects which announce a very dynamic future for the country.
During lunch – prepared by the embassy – in the gardens, Jean-Marie Le Rest inducted 3 Escoffier disciples of the Eternal City ( 2 red scarves, 1 blue one). Which proves once more that its determination to lift up this Lazio delegation with young and dynamic disciples.

Michel Bouit, the USA Country president has, like each year, gone to Villeneuve-Loubet with a group of American chefs. After a satisfaying visit of the Escoffier museum of culinary art, Michel Bouit and Bernard-Louis Jaunet had the honour to induct the chef Steve Joynt, executive chef at Spring run golf club in Bonita Springs, Florida who received his awards with great emotion. A solemn visit at Auguste Escoffier’s vault, at the cemetery of Villeneuve loubet, completed this day.
COUNTRY SOUTH AFRICA
Saturday, May 12, took place the first chapter of the country South Africa. Until then administered by the Indian Ocean Country and its president Yves Bouvier, this beautiful country is now flying on its own with Marie-Christine Giblot-Ducray as president. It was therefore as a country in its own right that a magnificent first chapter and a delicious gala dinner took place. Meeting was took for the 80 or so guests at Rovos Rail Station in Pretoria, the departure point for one of the world’s most luxurious, history-laden trains that travel across Africa with breathtaking scenery . The chapter took place in the station, beautifully decorated in the colonial style of the 1920s. New disciples were given the scarf with the famous spoon shot (7 red scarves, 1 green and 3 blue). The guests, after a cocktail to congratulate the new members, were invited to board the train for a dinner around Pretoria and its beautiful landscapes, in an atmosphere like in a Agatha Christie’s book. The freshly inducted Rovos Rail chef, Robert Baxa, helped by the team of French corner catering, concocted a dinner with the tastiest French accents. Congratulations to the president Marie-Christine Giblot Ducray, to her secretary Gloria Agustoni and their team for this beautiful event and the new impetus on the African continent.
Monday, May 14th was a wonderful evening in China. The China Country Spring Chapter took place at the Bellagio in Shanghai, where 21 new disciples were inducted (14 red scarves and 7 blue scarves). This same moment of reunion was chosen for the announcement of the results of the national final of the China Country contest “Young talents Escoffier”. It is thus the young chef Oliver, winner of the regional selection of Hangzhou, who will therefore go to Hong Kong in September for the final of the continent Asia.
To close the festivities, an Epicure dinner was held in honor of Paul Bocuse. Congratulations to Robert Fontana, Asia Country President, and Peter Zhou, China President, and their teams for this beautiful evening.
Note also the massive presence of Disciples Escoffier from all over Asia, but also from Europe, to participate, support, help, advise the candidates of the Asia-Pacific selection of the Bocuse d’Or that took place the 8 and last May 9 in Guangzhou.

From 25 to 27 November, Disciples Escoffier Riviera Cote d’Azur and the Disciples Escoffier International will participate to the 3rd edition of the Chefs World Summit in Monaco. The godfather of the edition will be Chef Mauro Colagreco, Mirazur Menton 2 Michelin stars, and under The High Patronage and in the presence of S.A.S. Prince Albert II of Monaco. Disciples of the 5 continents are expected!
From September 4th to 6th, Asia Continent Escoffier Young Talents finals and other Disciples Escoffier activities at the Hong Kong bar and restaurant fair. With the participation of all the bureaux of Asie Grand Chine thanks to the president Robert Fontana.
